***ATTENTION!!!*** After my break I decided to streamline my business by eliminating the smaller cakes and limiting the number of cakes I do. bulletTo make the cake smooth you need to use a Bounty paper towel. First, frost your cake and let the frosting sit for about 5-10 minutes to get a light crust. Second, lay the paper towel on the cake and gently smooth the frosting with your hand keeping the paper towel in place. Lift the paper towel and move to the next section to smooth. (You must use a frosting that is stiffer than the canned frosting or it will stick to the paper towel.)

 

bulletWhen baking your cake, cover the bottom rack with foil and bake the cake on the middle rack. This will keep the cake from making a peak like a mountain. This also bakes the cake at a more even temperature throughout the oven which keeps the sides from burning.

 

bulletTo make your cake moist, remove it from the pan as soon as you take it out of the oven. Cut the top off even with the sides and then flip it out of the pan onto a cooling rack.
